As we dive into our 6-Week Summer Fitness Challenge, it’s crucial to pair our physical activities with meals that are both nourishing and delightful. Our Crispy Halloumi Rocket Salad is perfect for a light, refreshing meal. This recipe is adaptable whether you have an air fryer or not, so everyone can enjoy this delicious and health-conscious dish. Here’s how you can whip it up for two.
2 Servings:
Ingredients:
- 200g halloumi cheese, sliced
- 2 cups rocket (arugula) leaves
- 1 red onion, halved and sliced
- 1 avocado, halved, pitted, and sliced
- 0.8 grams mixed herbs
- 2 tablespoons olive oil (divided for cooking and dressing)
- 2 tablespoons balsamic vinegar (divided for dressing and optional extra drizzling)
- Salt and pepper to taste
Cooking Instructions:
- Preheat the Air Fryer (or Oven):
- Set your air fryer to 200°C (400°F). (If using an oven, preheat it to the same temperature and prepare a baking sheet lined with parchment paper.)
- Prepare the Halloumi:
- In a bowl, toss the halloumi slices with 1 tablespoon of olive oil and the mixed herbs until well coated.
- Cook the Halloumi:
- Place the halloumi slices in a single layer in the air fryer basket. Cook for 6-8 minutes, flipping them halfway through, until they are golden brown and crispy. (If using an oven, spread the slices on the prepared baking sheet and bake for 10-12 minutes, flipping once, until golden and crispy.)
- Assemble the Salad:
- While the halloumi cooks, prepare the salad base. In a mixing bowl, toss the rocket leaves and sliced onion with 1 tablespoon of balsamic vinegar, a drizzle of olive oil, and season with salt and pepper. Gently fold in the avocado slices.
- Combine and Serve:
- Once the halloumi is cooked and slightly cooled, arrange it on top of the salad. Optionally, drizzle a bit more balsamic vinegar or olive oil over the top before serving.
