Serves 2
- Chicken Breasts: 2 large (about 150g each), boneless and skinless
- Lemon: 1, zested and juiced
- Fresh Herbs: A handful of parsley, basil, and thyme, finely chopped
- Olive Oil: 2 tablespoons
- Mixed Greens: 150g (such as rocket, spinach, and lettuce)
- Cherry Tomatoes: 100g, halved
- Cucumber: 1 small, sliced
- Red Onion: 1 small, thinly sliced
- Feta Cheese: 50g, crumbled
- Salt and Pepper: to taste
Instructions:
- Marinate the Chicken:
- In a bowl, combine lemon zest, half the lemon juice, half the chopped herbs, olive oil, salt, and pepper. Add the chicken breasts, ensuring they are well-coated with the marinade. Let sit for at least 30 minutes, or refrigerate for up to 2 hours for more flavor.
- Grill the Chicken:
- Preheat your grill to medium-high heat. Grill the chicken for 6-7 minutes on each side or until fully cooked through and nicely charred. Let it rest for a few minutes, then slice thinly.
- Prepare the Salad:
- In a large salad bowl, toss the mixed greens, cherry tomatoes, cucumber, and red onion with the remaining lemon juice and olive oil. Season with salt and pepper.
- Assemble and Serve:
