Summer Challenge Finale Recipe: Grilled Lemon-Herb Chicken Salad

Serves 2

  • Chicken Breasts: 2 large (about 150g each), boneless and skinless
  • Lemon: 1, zested and juiced
  • Fresh Herbs: A handful of parsley, basil, and thyme, finely chopped
  • Olive Oil: 2 tablespoons
  • Mixed Greens: 150g (such as rocket, spinach, and lettuce)
  • Cherry Tomatoes: 100g, halved
  • Cucumber: 1 small, sliced
  • Red Onion: 1 small, thinly sliced
  • Feta Cheese: 50g, crumbled
  • Salt and Pepper: to taste



  • Marinate the Chicken:
    • In a bowl, combine lemon zest, half the lemon juice, half the chopped herbs, olive oil, salt, and pepper. Add the chicken breasts, ensuring they are well-coated with the marinade. Let sit for at least 30 minutes, or refrigerate for up to 2 hours for more flavor.
  • Grill the Chicken:
    • Preheat your grill to medium-high heat. Grill the chicken for 6-7 minutes on each side or until fully cooked through and nicely charred. Let it rest for a few minutes, then slice thinly.
  • Prepare the Salad:
    • In a large salad bowl, toss the mixed greens, cherry tomatoes, cucumber, and red onion with the remaining lemon juice and olive oil. Season with salt and pepper.
  • Assemble and Serve:
    • Add the sliced grilled chicken to the top of the salad. Sprinkle with feta cheese and the remaining fresh herbs.
