As we continue with our 6-Week Summer Fitness Challenge, keeping energized with delicious, nutritious meals is key. Our Crispy Chicken and Sun-Dried Tomato Pasta is a crowd-pleaser that combines rich flavours and hearty ingredients, perfect for refuelling after your workout sessions. This recipe is designed for two servings, making it ideal for a shared meal or for saving leftovers for a quick next-day lunch.
Ingredients:
2 servings:
- 160g pasta (dry)
- 120g chicken breast, thinly sliced
- 100g Philadelphia Lightest cream cheese
- 1 onion, finely chopped
- 1 vegetable stock cube
- 50g sun-dried tomatoes (drained and chopped)
- 2 tablespoons tomato puree
- 2 tablespoons light butter
- 1 teaspoon garlic puree
- A pinch each of garlic powder, paprika, and oregano
- 10g Parmesan cheese, grated
Instructions:
- Cook the Pasta:
- Start by boiling the pasta as per the package instructions until al dente. Drain and set aside once done.
- Prepare the Chicken:
- While the pasta cooks, heat a non-stick pan over medium heat. Season the chicken slices with salt, pepper, and paprika, then cook until golden and crispy, about 3-4 minutes per side. Remove from the pan and keep warm.
- Sauté the Aromatics:
- In the same pan, melt the light butter and add the chopped onions, garlic puree, garlic powder, paprika, and oregano. Cook until the onions are soft and aromatic, about 3-5 minutes.
- Create the Sauce:
- Add the tomato puree to the onions and cook for an additional minute. Mix in the Philadelphia cream cheese, sun-dried tomatoes, and 100ml of vegetable stock. Stir continuously until combined and simmer for a few minutes until the sauce thickens.
- Combine and Serve:
- Toss the cooked pasta and crispy chicken back into the pan with the sauce, ensuring everything is evenly coated. Heat through, then divide the pasta between two bowls, sprinkle with grated Parmesan, and serve immediately.
