Summer Vegetable Tart! A light, puff pastry with your favourite vegetables to give your evening a real healthy summertime vibe
Enjoy your own version of this as a light dinner after a workout. Rustle it up before a Boogie Bounce session and you can have a delicious treat waiting for you and the family by the time you’ve done a quick workout on your mini trampoline.
Ingredients
- 1 x puff pastry roll
- Spinach
- Zucchini,
- Mushrooms,
- Peppers,
- Spring onions
- Coriander
- Mozzarella cheese – grated – your choice on quantity – enough to sprinkle on top
- 250g carton of passata
Herbs and spices
- 1 tbsp Moroccan spice
- 1 tsp oregano
- 1 tbsp of lazy garlic
- ½ tsp tomato puree
- ½ tsp of chilli flakes (optional)
Method –
Add the following ingredients together in a bowl
- 250g carton of passata
- 1 tbsp Moroccan spice
- 1 tsp oregano
- 1 tbsp of lazy garlic
- ½ tsp tomato puree
- ½ tsp of chilli flakes (optional)
Roll out pastry onto tray (cover with greaseproof paper) and cover in passata mix.
Cut vegetables of your choice into slices/chunks and pop over the top and sprinkle with cheese.
Pop in the oven on 180/200 for 25 minutes and serve with salad of your choice
