Autumn Veggie Risotto with Mushrooms and Butternut Squash

This Autumn Veggie Risotto is a creamy and satisfying dish, packed with seasonal vegetables like mushrooms and butternut squash. Perfect for a post-rebounding meal, this dish offers a hearty combination of nutrients while staying light.

Ingredients:

Serves 4

  • 250g arborio rice
  • 200g butternut squash, diced
  • 150g mushrooms, sliced
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 750ml vegetable stock
  • 50g Parmesan (optional)
  • 1 tbsp olive oil
  • Fresh thyme for garnish

Instructions:

 

  • In a large pan, heat olive oil and sauté the onion and garlic for 2-3 minutes until softened.
  • Add the diced butternut squash and cook for 5 minutes. Then, stir in the rice and cook for another 2 minutes.
  • Gradually add the vegetable stock, stirring continuously, until the rice absorbs the liquid and becomes creamy (about 20 minutes).
  • In a separate pan, sauté the mushrooms until golden brown, then stir them into the risotto.
  • Season with salt and pepper, and garnish with thyme and Parmesan (if using).

Pair with one of:

  • Green Salad: Add a side of mixed greens for extra fibre.
  • Garlic Bread: A crispy garlic bread slice pairs well with the creamy texture of risotto.
