Energize Your Summer Challenge with Our Beef and Broccoli Noodle Stir-Fry

As we kick off our 6-Week Summer Fitness Challenge at Boogie Bounce, we understand that combining great workouts with delicious, nutritious meals is key to achieving your health goals. That’s why we’ve put together this quick and tasty recipe for a Beef and Broccoli Noodle Stir-Fry. Packed with vibrant veggies and protein-rich beef, this dish is perfect for refuelling after a workout and keeping you powered throughout the day.

2 Servings:

Ingredients:

 

  • 100g broccolini (baby broccoli), cut into bite-sized pieces
  • 1 medium carrot, julienned
  • 2 cloves garlic, minced
  • 150g egg noodles
  • 240g beef mince
  • 25ml soy sauce
  • 15 grams honey
  • 50 grams ketjap manis (sweet soy sauce)
  • 1 tablespoon sesame seeds, for garnish
  • 1.5 tablespoon Tomato Ketchup
  • 50 ml water (for the sauce)

Cooking Instructions:

 

  • Prepare the Ingredients:
    • Fill a large saucepan with water, add a half teaspoon of salt, and bring to a boil for the noodles. Prepare the broccoli by halving any thick stems lengthways, then cutting them widthways into thirds. Trim and peel the carrot, then use a peeler to create long ribbons down the length of the carrot. Peel and grate the garlic, or use a garlic press.
  • Cook the Noodles:
    • When the water is boiling, add the noodles and cook until tender, about 4 minutes. Once cooked, drain the noodles and rinse under cold water to prevent them from sticking together. Set aside.
  • Brown the Beef:
    • While the noodles are cooking, heat a large frying pan over medium-high heat without adding oil. Once hot, add the beef mince and fry until it is thoroughly browned, about 5-6 minutes. Break the mince up with a spatula as it cooks. Drain any excess fat and season with salt and pepper. Transfer the cooked beef to a bowl and cover to keep warm.
  • Stir-Fry the Vegetables:
    • Return the frying pan to the heat, adding a drizzle of oil if necessary. Once hot, add the broccoli and stir-fry for about 2-3 minutes. Next, add the carrot ribbons and garlic, and stir-fry for an additional 30 seconds. Splash a little water into the pan, then cover and let the vegetables cook until tender, about 4-6 minutes. Season with salt and pepper.
  • Prepare the Sauce:
    • In a small bowl, mix together the soy sauce, ketjap manis, honey, tomato ketchup, and a little water. Stir in half of the sesame seeds to incorporate. Set aside.
  • Combine and Heat Through:
    • Add the cooked mince and noodles back to the pan with the vegetables. Pour the prepared sauce over the mixture and stir everything together until well combined and piping hot, about 1-2 minutes.
  • Serve and Enjoy:
    • Plate the stir-fry and sprinkle the remaining sesame seeds over the top as a garnish.
