Simple & Delicious Butter Chicken

Ingredients:

 

2 servings:

  • Chicken: 2 chicken breasts, diced
  • Rice: Basmati rice (150g)
  • Garlic Puree: 2 tsp
  • Red Onion: 1, finely chopped
  • Red Chili: 1, finely chopped
  • Tomato Puree: 2 tbsp
  • Sour Cream: 50g
  • Chicken Stock Paste: 1 tbsp
  • Mustard Seeds: 1 tsp
  • Green Beans: 150g, trimmed
  • Cooking Cream: 50ml
  • Butter: 20g
  • Olive Oil, Salt, Pepper
  • Paprika, Sugar: As needed for seasoning

Instructions:

 

  1. Cook the Garlic Rice:
    • Bring water to a boil in a saucepan. Add the basmati rice with a pinch of salt and cook according to package instructions. When the rice is almost done, stir in 1 tsp of garlic puree and a dab of butter for that aromatic lift.
  2. Prepare the Green Beans:
    • Heat a drizzle of olive oil in a pan. Add mustard seeds and let them pop for a minute. Add the green beans and sauté until they are brightly colored and tender-crisp. Season with salt and pepper to taste.
  3. Make the Butter Chicken Sauce:
    • In the same pan, add a bit more oil and sauté the chopped onions, red chili, and remaining garlic puree until softened. Stir in the tomato puree, a dash of paprika, and a bit of sugar to balance the acidity. Pour in the cooking cream and add the chicken stock paste, blending everything into a smooth sauce.
  4. Cook the Chicken:
    • In another pan, melt some butter over medium heat and add the diced chicken. Season with salt and pepper, and cook until golden brown and cooked through.
  5. Combine Chicken and Sauce:
    • Once the chicken is cooked, pour the prepared sauce over it, mixing well to coat. Simmer for a few more minutes until everything is piping hot and the flavours meld.
  6. Serve:
    • Spoon the garlic rice onto plates, top with the butter chicken, and align the mustard seed green beans alongside. Dollop some sour cream over the chicken for a creamy finish.
