Nutty Chocolate Energy Balls

12 balls

  • Medjool Dates: 200g, pitted
  • Mixed Nuts: 100g (almonds, walnuts, and pecans work well)
  • Cocoa Powder: 2 tablespoons
  • Vanilla Extract: 1 teaspoon
  • Sea Salt: A pinch
  • Desiccated Coconut: For rolling (optional)



  • Prepare the Dates:
    • If the dates are not soft, soak them in warm water for about 10 minutes, then drain. This will help them blend more easily.
  • Process the Ingredients:
    • In a food processor, combine the pitted dates, mixed nuts, cocoa powder, vanilla extract, and a pinch of sea salt. Process until the mixture is finely ground and sticks together when pressed between your fingers.
  • Shape the Energy Balls:
    • Take small scoops of the mixture and roll into balls about the size of a walnut. If the mixture is too sticky, wet your hands slightly with water to make rolling easier.
  • Coat the Balls:
    • Roll the energy balls in desiccated coconut if desired. This adds a nice texture and flavour, but you can also leave them plain or roll them in cocoa powder or crushed nuts.
  • Chill and Serve:
    • Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least an hour to set. This makes them firmer and enhances the flavours.
