This Baked Salmon with Roasted Autumn Veg is the perfect dish for staying fuelled during your fitness journey, especially when you’re getting in your Little Black Dress rebounding sessions. Rich in omega-3 fatty acids and paired with seasonal vegetables, this meal complements your efforts to tone up with the help of the Boogie Bounce programme.
Ingredients:
Serves 4
- 4 salmon fillets
- 2 sweet potatoes, peeled and diced
- 1 red onion, chopped
- 2 carrots, sliced
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
- Lemon wedges for serving
Instructions:
- Preheat the oven to 200°C. Toss the sweet potatoes, carrots, red onion, and garlic in olive oil, thyme, salt, and pepper. Spread the vegetables on a baking tray and roast for 25-30 minutes, until tender.
- While the vegetables are roasting, season the salmon fillets with salt and pepper. Place them on a separate baking tray lined with parchment paper and bake for 12-15 minutes, or until cooked through.
- Once both the salmon and vegetables are ready, serve with lemon wedges for added zest.
