Turkey and Spinach Meatballs with Tomato Sauce

These Turkey and Spinach Meatballs are a great way to pack in lean protein and iron, which will help you recover after a high-energy rebounding session. Paired with a rich tomato sauce, they provide a nutritious, low-fat meal that’s perfect for fuelling your fitness goals.

Ingredients:

Serves 4

  • 400g lean turkey mince
  • 100g spinach, finely chopped
  • 1 egg
  • 2 garlic cloves, minced
  • 1 tbsp breadcrumbs
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 tin chopped tomatoes (400g)
  • 1 small onion, diced
  • 1 tsp olive oil
  • 1 tsp dried basil

Instructions:

 

  • Preheat your oven to 180°C. In a bowl, combine the turkey mince, chopped spinach, egg, garlic, breadcrumbs, oregano, salt, and pepper. Mix well and shape into meatballs.
  • Place the meatballs on a baking tray and bake for 15-20 minutes, or until cooked through.
  • While the meatballs are baking, heat the olive oil in a pan over medium heat. Add the diced onion and sauté until softened. Add the chopped tomatoes, basil, salt, and pepper, and simmer for 10 minutes.
  • Once the meatballs are done, transfer them to the tomato sauce and simmer for another 5 minutes. Serve hot.
