Let’s kick off the Little Black Dress Challenge with this hearty Turkey and Sweet Potato Chili, which is a protein-packed, fibre-rich meal that’s perfect for staying warm during the autumn months. It’s also low in fat, making it a healthy option for those watching their intake.
Ingredients:
Serves 4
- 400g lean turkey mince
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 tin chopped tomatoes (400g)
- 1 tin kidney beans (400g), drained and rinsed
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 500ml chicken stock
- Olive oil
- Salt and pepper to taste
Instructions:
- Heat a tablespoon of olive oil in a large pot over medium heat. Add the chopped onion, garlic, and red bell pepper, sautéing until soft, about 5 minutes.
- Add the turkey mince and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the chili powder, cumin, and paprika, allowing the spices to toast for a minute.
- Add the diced sweet potatoes, chopped tomatoes, kidney beans, and chicken stock. Stir well, then bring to a simmer.
- Cover and let simmer for 25-30 minutes, or until the sweet potatoes are tender and the flavours have melded together. Season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs if desired.
