Autumn Vegetable and Quinoa Stuffed Peppers

These Autumn Vegetable and Quinoa Stuffed Peppers are a vibrant, healthy, and filling meal, perfect for autumn. Packed with protein-rich quinoa and seasonal veggies, they’re a fantastic option for anyone looking for a nutritious, satisfying meal as part of their fitness routine.

Ingredients:

(4 Peppers)

• 4 large bell peppers
• 150g quinoa
• 1 courgette, diced
• 1 red onion, diced
• 2 garlic cloves, minced
• 100g spinach, chopped
• 1 tin chopped tomatoes (400g)
• 1 tsp smoked paprika
• 1 tsp dried oregano
• Olive oil
• Salt and pepper to taste

Instructions:

• Preheat your oven to 180°C. Cut the tops off the bell peppers and remove the seeds. Brush the peppers with olive oil and roast them in the oven for 10 minutes until slightly softened.
• Meanwhile, cook the quinoa according to package instructions and set aside.
• Heat 1 tbsp of olive oil in a large pan over medium heat. Add the diced onion and garlic, sautéing until softened.
• Add the diced courgette and cook for another 3-4 minutes. Stir in the chopped tomatoes, spinach, smoked paprika, oregano, salt, and pepper. Let it simmer for 5 minutes.
• Mix the cooked quinoa with the vegetable mixture. Spoon the filling into the roasted peppers and return them to the oven for 10-15 minutes until heated through.
• Serve warm and enjoy!
