These Autumn Vegetable and Quinoa Stuffed Peppers are a vibrant, healthy, and filling meal, perfect for autumn. Packed with protein-rich quinoa and seasonal veggies, they’re a fantastic option for anyone looking for a nutritious, satisfying meal as part of their fitness routine.

Ingredients:
(4 Peppers)
- 4 large bell peppers
- 150g quinoa
- 1 courgette, diced
- 1 red onion, diced
- 2 garlic cloves, minced
- 100g spinach, chopped
- 1 tin chopped tomatoes (400g)
- 1 tsp smoked paprika
- 1 tsp dried oregano
- Olive oil
- Salt and pepper to taste
Instructions:
- Preheat your oven to 180°C. Cut the tops off the bell peppers and remove the seeds. Brush the peppers with olive oil and roast them in the oven for 10 minutes until slightly softened.
- Meanwhile, cook the quinoa according to package instructions and set aside.
- Heat 1 tbsp of olive oil in a large pan over medium heat. Add the diced onion and garlic, sautéing until softened.
- Add the diced courgette and cook for another 3-4 minutes. Stir in the chopped tomatoes, spinach, smoked paprika, oregano, salt, and pepper. Let it simmer for 5 minutes.
- Mix the cooked quinoa with the vegetable mixture. Spoon the filling into the roasted peppers and return them to the oven for 10-15 minutes until heated through.
- Serve warm and enjoy!
